Recipes from the Mini-Challenge

Potato Salad
3 medium potatoes (actually 1 giant and 1 medium potato)
3 eggs
wild onions
chives
ranch dressing
salt and pepper to taste

Cube and boil potatoes, hard boil eggs.  Slice eggs, dice chives and onions, mix with ranch dressing.  Add salt and pepper to taste.

My favorite method to hard boil eggs is as follows; bring eggs to a boil, let boil for 10 mins.  remove from pan and place into freezer for 20 mins.  Hard boiled eggs are easier to peel if they have been sitting around for a few days, you'd be surprised at how long their actual shelf life is.

Macaroni Salad
2 cups cooked macaroni noodles
1 hard boiled egg white
wild onions
chives
ranch dressing
mustard
salt and pepper to taste

chop egg white, onions, and chives.  Mix ingredients.  I made about half of this recipe, I used about 1/2 of an egg white from the potato salad and a cup of cooked macaroni.  It took 2 packets of mustard to get the taste right.
