Here it is - the hit at brunch this morning!!
Here is the recipe for the crust:
1 TBS yeast
1 cup warm water
1 cup wheat flour
1 cup corn flour
2 TBS maple sugar (recipe called for 2 tsp but I mistakenly measure out tablespoons)
1 tsp salt
2 TBS oil
Dissolve yeast in warm water and allow it to set until foamy (about 10 min)
Add yeast mixture to the rest of the combined ingredients and allow it to rise (covered with a towel) for 30 minutes. Spread across slightly oiled baking sheet and top with items of your choice. Bake for 30 minutes in 350 degree preheated oven.
I topped it with tomato sauce and 1/2 of the pizza with eggplant italiano and the other 1/2 with tomatoes and garlic. I spread crushed garlic/oil around the edges and sprinkled chives across the top.
Tomorrow I think I am going to try breakfast pizza topped with eggs and the baked potatoes from mom. To be continued...

ReplyDeleteA TBS of yeast, that's a third of my stock...I'll have to get a yeast starter going if I am going to make this.
ReplyDeleteThat's what I used. The actual recipe said 1 (.25 oz) package active dry yeast. I wasn't sure what the conversion is so you may get away with using less. I'm sure I'll have extra yeast so you can have it.
